What is Lumpiang Sariwa?
Lumpiang sariwa is a type of spring roll that is popular in the Philippines. Meat like chicken or pork and fresh vegetables like carrots, sweet potatoes, green beans are first sautéed in onion and garlic and cooked in broth then rolled inside a wrapper made of egg and flour. A sweet and savory sauce complements the lumpia with few pinches of crushed peanuts and fresh lettuce.



How to make the wrapper



- Grease a medium-sized non-stick pan (9″ diameter bottom) with oil and set the stove to low heat.
- Add in enough of the wrapper mixture to cover a 9″ wide circle. Swirl the pan to evenly spread the batter and form a circle.
- Cook batter for 1 minute or until the top surface dries up. Carefully slide the wrapper off to a plate.
How to wrap Lumpiang Sariwa



- Lay a wrapper smooth side down and place a lettuce leaf in the middle.
- Place 3-4 tablespoonfuls of lumpia filling.
- Gently fold the sides towards the middle and carefully turn the lumpia over.
- Pour some sauce on the lumpia and top it with crushed peanuts.

Ingredients
INGREDIENTS:
- 1/2 lb ground pork
- 1 medium size-sweet potato cut into thin strips and fried
- 1 small carrot cut into thin strips
- 2 cups snap peas or green beans cut into thin strips
- 1 cup extra firm tofu cut into strips and fried
- 3 tbsp minced onion
- 2 tbsp minced garlic
- 1/2 tsp ground black pepper to taste
- 1 cup pork bone broth
WRAPPER:
- 1 egg beaten
- 1 cup water
- 1/8 tsp of salt
- 2 tbsp cooking oil
- 1 cup all-purpose flour
SAUCE:
- 2 cups water
- 1/2 cup brown sugar
- 2 tbsp soy sauce
- 2 tbsp cornstarch
- 1 tbsp garlic minced
GARNISH:
- crushed peanuts
- lettuce
Instructions
For Lumpiang Sariwa
- In a medium-sized pan, sauté onion and garlic in medium heat.
- When garlic turns slightly brown, add in the ground pork.
- Continue sautéing until the pork turns light brown.
- Add ground black pepper, and carrot.
- Add the pork bone broth and fish sauce. Cover and cook for 10 minutes or until the carrots are soft.
- Add the green beans. Cover and cook for 3 minutes.
- Add the fried tofu and sweet potatoes.
For Lumpia Wrapper
- In a small bowl, mix egg (beaten), water, salt and cooking oil. Mix thoroughly.
- Add the all-purpose flour incrementally while mixing.
- Strain the resulting mixture to avoid any lumps.
- Grease a medium-sized non-stick pan (9" diameter bottom) with oil. Set the stove to low heat.
- Add in enough of the wrapper mixture to cover a 9" wide circle. Swirl the pan to evenly spread the batter to form a circle.
- Cook batter for 1 minute or until the top surface dries up.
- Carefully slide the wrapper off to a plate. To avoid sticking, add wax paper between the wrappers. Set aside.
For Lumpia Sauce
- In a sauce pan, mix water, soy sauce, salt, minced garlic, cornstarch and brown sugar.
- Apply low to medium heat to the pan with constant stirring.
- Cook for 3-4 minutes or until the mixture has the right consistency. Set aside.
Putting it all together
- Lay a wrapper smooth side down and place a lettuce leaf in the middle.
- Place 3-4 tablespoonfuls of lumpia filling.
- Gently fold the sides towards the middle and carefully turn the lumpia over.
- Pour some sauce on the lumpia and top it with crushed peanuts.
