
Soft, tender pork ribs with a heap of vegetables cooked in sour tamarind flavored soup base, Sinigang na Baboy is one of the classic dishes widely popular around the world that is uniquely Filipino.



What is Sinigang na Baboy?
Sinigang na baboy is a tangy soup of pork and vegetables seasoned with fish sauce and spiced with green chilies. The addition of tamarind extract gives the soup its characteristic sour taste that greatly complements the savory meat and vegetables.
The traditional method of preparing this dish calls for tamarind to be boiled and crushed to extract the juice. If you don’t have tamarind, you may opt to use other souring agents like kalamias, santol, dahon ng libas, bayabas (guava), calamansi, or even lemon if that’s what you have.
In this recipe, we will skip the traditional way and just use grocery store-bought tamarind soup base powder which is just as good.😊
Sinigang Variations
Sinigang is one of the most unique and versatile dishes in Philippine cuisine owing to a number of ways in which it can be prepared. In this recipe, we will use pork ribs, but other parts such as pork belly, hocks, and neck bones can. be used. You may also use tiger prawns (sugpo), milkfish (bangus), or, salmon. Other vegetables like kangkong (water spinach), okra, pechay, and baby bok choy can also be thrown in.



Ingredients for Sinigang na Baboy
- 1 tbsp olive oil
- 1/2 medium-sized onion chopped
- 3 cloves garlic minced
- 2 medium-sized tomato sliced into 8ths
- 1 kg 2.2 lbs of pork side ribs seasoned with salt and pepper
- 2 cups string beans
- 1 taro
- 4 cups water
- 1 packet tamarind soup base
- 1 radish
- 1/2 small head of cabbage cut into quarters
- 1 eggplant
- 2 green chilies
- 1 tbsp fish sauce
- 2 tsp black pepper
How to make Sinigang na Baboy
- Clean and wash the pork. Cut into single ribs. Wash again and rub with salt. Wash off the excess salt with water. Season with ground black pepper and set aside.
- In a medium-sized pot, heat up 2 tbsp of oil. Once the oil is hot, add the onion and garlic. Sauté for 2-3 minutes until garlic is golden brown.
- Add the tomatoes and continue sautéing for a minute. Add the pork ribs and sear on all sides. Continue sauteíng for a few minutes.
- Add water, string beans, taro, and a packet of tamarind soup base powder.
- Cover the pot and allow it to boil. Cook for 30 minutes.
- When done, remove coagulated blood, the brown foam floating in the soup (if any).
- It’s time to add in all your remaining veggies. Place the eggplant, radish, cabbage, and green chilies in the pot and cover. Let it simmer for 5 more minutes.
- Once done, taste the broth and adjust for seasoning, by adding fish sauce and ground black pepper.
- Simmer for 10 more minutes or until the vegetables are cooked. Enjoy.
